Getting Back in the Kitchen

Many of us choose to stay out of the kitchen as much as possible when we try to lose weight. We carry an “Out of sight, off my hips” motto. But cooking and preparing food can be quite therapeutic and a huge part of the food-issue healing process.

Take something as simple as fresh squeezed orange or citrus juice for example.  Breathing in those bright uplifting citrus oils can be just the shot of ‘aromatherapy’ you need in the afternoon. Three minutes expending energy powering a manual squeeze juicer is a better stress reliever than a novelty stress ball.  Getting creative with a splash of soda water to make a lemonade spritzer or blending with some protein powder to create an Orange Julius might be just what you need to realize that food is not your enemy. You are not only in control of what you are eating, you are creating fabulous healthy food and drinks that are much better than just about any fast food, take out or frozen section meal!

Look at food preparation as a means to an end AND a therapy session. Experience all of what food prep has to offer. Take it all in as you cook: smells, textures, sights – you’ll even get a little exercise with all that chopping and juicing.

We can’t avoid food forever. Sure, during the initial stages after weight loss surgery we might want to try, but eventually we have to come to terms with food being a part of our lives. Why not take control, and make food prep so much more than a daily chore?!

Make Changes When Necessary

Weight loss and maintenance is as individual as you are. What works well for one person may be sheer torture for the next. Hitting the gym every day at 6 a.m. may keep one person on track while causing the next person to shriek in horror. Luckily for the millions of us out there trying to lose weight and keep it off, there are also plenty of options.

Find what works for you and stick with it until it either no longer works for you or until you get bored with it; then move on. There’s always another technique just up the road. For some people the idea of living and breathing food and exercise keeps them motivated and on track, making food and exercise a non-issue works best.

You may also find that at different stages of your weight loss your feelings about food and exercise may change. In the beginning you may find that a rigid diet and exercise weight loss lifestyle works best only to find that once you’ve reached your goals you prefer a less focused, more relaxed approach to keeping it off.

Fortunately for us there’s always new a technique or trick to help us reach our goals. Keep an open mind for new approaches that will help you through tough times and all the emotional changes during your weight loss journey. And know that it’s ok to change things up as needed.

Shannon’s Dish of the Week! Skillet Chicken & Vegetables Parmesan

Skillet Chicken & Vegetables Parmesan

Time prep: 5 min

total: 19 min

servings total: 4 servings

What You Need

2 cloves garlic, minced

¼ cup KRAFT Light Zesty Italian Dressing

4small boneless skinless chicken breast halves (1 lb.)

1tsp. dried basil leaves, divided

1/4tsp. black pepper

1pkg. (10 oz.) frozen mixed vegetables (carrots, broccoli, beans, peppers), thawed

2Tbsp. KRAFT Grated Parmesan Cheese

Make It

COOK garlic in dressing in large skillet on medium heat 1 min. Add chicken, 3/4 tsp. basil and pepper; cook 4 to 5 min. on each side or until chicken is done (165ºF).

ADD vegetables and remaining basil; cook 2 to 3 min. or until heated through, stirring occasionally.

SPRINKLE with cheese.

Special Extra
For a spicier flavor, substitute crushed red pepper for the black pepper.

Shortcut

To quickly thaw the mixed vegetables, place them in a colander and run warm tap water over them just until thawed.

State Health Plan No Longer Covers Bariatric Surgery

Bariatric surgery will no longer be covered by the state health benefit plan.  The House of Health and Human Services committee gathered together on February 16 to hear patients, doctors and advocates give their testimonies about the benefits of bariatric surgery and why it should still be covered by the state health benefit plan.

A New Type of New Year’s Resolution

The New Year is a time to reflect upon the past year and plan for the future.  Our resolution lists are long, often unrealistic and inevitably disappointing and yet, we make them every year. Now that we’re well into our second month of the year, we challenge you to throw away your resolution list and make a permission list. Instead of telling yourself what you will do, what you must do, what you resolve to do with the upcoming year, why not turn resolutions on their heads and make a permission list?

So you’re on your new and healthier lifestyle of good diet and exercise. Now give yourself permission to indulge once a week. Give yourself permission to ignore those who get in the way of your success. Give yourself permission to put yourself first. Give yourself permission to cry, scream, fuss and yell in a pillow every once in a while. But most important, give yourself permission to love yourself.

Why is the last one the most important?  Because loving yourself leads to good health. When we eat more fiber and less fat we are not necessarily focusing on losing weight, we are focusing on our health. When we take deep breaths and find moments of peace, we are loving ourselves by reducing our stress level.

So from now on, start enjoying your life and your health my eliminating the guilt, disappointment and rigidity of resolutions. The weight loss will come naturally as a result.

Shannon’s Dish of the Week! Lemon Pepper Beef and Cabbage

This week’s recipe is:

Lemon Pepper Beef and Cabbage

Ingredients:

  • 100 grams lean ground beef or steak
  • 2 cups minced cabbage
  • 1 cup beef broth
  • 1 Tbs. minced onion
  • A sprinkle of onion and garlic powder
  • 2 lemon slices (with rind)
  • 1 bay leaf
  • Freshly ground black pepper to taste
  • 1/2 cup water (or more as needed)

Directions:

Brown the ground beef with the onion. Pat off any excess oil carefully. Sprinkle spices on the meat and add beef broth, bay leaf, and lemon slices. Bring to a boil and add cabbage and water. Sprinkle liberally with fresh ground pepper and simmer until water is absorbed and the pan begins to brown. Add a little more water to deglaze the pan and continue cooking until cabbage is tender and most of the liquid is absorbed again. Remove lemon slices and bay leaf and serve hot. Garnish with a lemon wedge and additional black pepper.

Have A Little Patience

Sometimes it can be a little challenging when it comes to getting started with bariatric surgery. Wishing, hoping, praying, waiting on insurance approval, phone calls to retrieve old medical records and test results can seem like a never-ending task. But have patience. You are not alone and there’s much you can do in the meantime to kick start your weight loss.

Start by attending your surgeon’s support groups. Getting some of your questions answered prior to surgery, can give you great insight and make your experience just a little smoother. Find some inspirational blogs. There are many people out there who have outstanding and motivating blogs chronicling their weight loss efforts. Or better yet, start your own blog! Online message boards are also extremely helpful and free.

If you find yourself in a stall pattern, waiting for paperwork or other hold ups, consider asking your surgeon what other options are available in the meantime. They may offer medical weight loss programs, work out groups, nutritional counseling, psychological counseling or expert advice on exercise custom tailored to you. Take advantage of everything offered, even before your surgery, and you’ll be that much further when your paperwork comes through.

And last but not least, don’t sweat it. It took careful consideration to make the decision to have weight loss surgery.  The excitement is huge and you just want to do it. The simple reality is that paperwork simply takes time. Hang-ups happen. But your surgeon’s office is working hard to get you the surgery you need and a little patience goes a long way.

HCG P2 Chicken Chili

Nutrition Info

Calories: 166.6

Ingredients

1 large tomato, diced
3oz chicken, diced
.5 cup diced onion
1 garlic clove, diced
1tsp cumin
1tsp chili powder
.5tsp cilantro

Directions
In a medium size non-stick pan(or pot) cook chicken till done. Add diced tomatoes, onion, garlic, and spices to chicken. Cook on med high until tomatoes are soft. Add small amounts of water if needed. Cook till juices reduce down. Serve hot!

Make Your Own Rules

If you’ve ever played a board game with a young child you will have undoubtedly noticed two things. Number one, they make up rules as they go along and number two, the rules constantly change to suit their whims. They have little or no use for the dynamics of rules, nor do they care. They simply want to play, and play their way. As adults, our lives are full of rules, some self imposed, others placed upon us by the powers that be. But what if, for just a few moments each day, you could play by your own rules?

Of course, no one is suggesting that you break any rules, but by all means feel free to create a few new ones in your life, even if they exist only for a moment and simply to suit a whim.

New rule: You could take 10 minutes to yourself and sit in the sunlight on a mild winter day.
New rule: You could take 5 deep breaths and skip one stressful activity today.
New rule: You may excuse yourself from one household chore of your choice today.

They may seem small, but small changes make for long-term success. And there is something empowering, liberating and relaxing when you make up the rules to your own life.

The say, “it’s not important if you win or lose, it’s how you play the game,” also applies to weight loss. So why not make up a few of your own rules as you go along? It will certainly make things more fun, interesting, less stressful and who knows, you might even win.
